To this day I think I could walk right into the bakery and make sticky buns from scratch: make the dough in the big Hobart mixers, make the smear, roll the dough out to size, spread the dough with cinnamon sugar mixture, raisins and /or nuts, egg the edge for sealing, roll into tight snakes, cut into pieces, smear the pans (there's nothing that compares to a well-made smear), put the rolled pieces in the pan to proof, then into the ancient revolving five-shelf oven.
